Naples Pizza Celebrates Food Heritage Status in Europe

After a 25-year struggle, pizza makers in Naples, Italy, have won their fight to be included on the European Union’s list of protected foods. From now on, Naples-style pizza can only be served in restaurants that have received the TSG (Traditional Specialty Guaranteed) label. The city of Naples
celebrated the achievement by throwing a huge street party that included giving away 250 free pizzas from the first pizzeria to boast the TSG certificate.
So what makes a Pizza Napoletana authentic? For starters, the dough must be stretched by hand (without rolling pins) and made only of hard wheat flour, fresh yeast, water and sea salt. The pizza is then topped with olive oil, San Marzano tomatoes (in slices no thicker than a third of an inch), mozzarella cheese made from buffalo milk, and chopped fresh basil.
